In May of 2010 while attending a family birthday gathering I tasted what at the time I believed to be the best ribs I’d ever had. The man behind those ribs was my best friend Brian Milacek who had just taken Myron Mixon’s 3 day cooking class in Georgia and learned his chops. After many questions and a little harassment, Brian agreed to teach me what he learned from Myron. In September of 2010 Brian and I entered Moonshine’s Annual Rib-a-Cue, a rib competition for local restaurants. To our surprise we were awarded 1st place in the Judge’s Vote that year, beating out several brick and mortar establishments including Honky Tonk BBQ, SmokeDaddy, and Frontier. We have been awarded 1st and 2nd place in both of the competitions that we’ve entered since then with our baby back ribs.
Since entering the BBQ circuit in 2010, Pitmaster Paul Samojluk has hosted several pop up events in addition to doing some catering. At the pop up event at Sportsman’s Club in September of 2016 Pitmaster Paul had a long conversation with PJ (Peter) Zonis, the owner of Lockdown Bar and Grill, and the concept of Lockdown Smoked was born. After several months of discussions and planning, Pitmaster Paul and PJ decided to convert Lockdown’s former delivery and take out space into a proper BBQ restaurant.
